1 whole chicken (about 2 kg), preferably free-range
2 liters of water
1 large onion, peeled and quartered

Instructions
Prepare the Ingredients: Begin by preparing all your ingredients. Wash the chicken thoroughly and cut it into pieces. Peel and chop the onion, carrots, and celery. Mince the garlic and set aside.
Boil the Chicken: In a large pot, pour the water and add the chicken pieces. Bring the water to a boil over high heat. As soon as the water starts to boil, reduce the heat to medium-low, allowing the chicken to simmer gently.
Add Aromatics: Add the chopped onion, carrots, celery, garlic, and bay leaf to the pot. Stir well to combine. Cover the pot with a lid and let it simmer for about 30 minutes. This will allow the flavors of the vegetables and chicken to infuse into the broth.
